In 1982, Austin, Texas, became home to a Tex-Mex establishment that set the standard for authentic, fresh, and flavorful cuisine. That establishment is none other than Chuy’s. Let’s take a journey back to its roots and discover how it has stayed true to its original vision.
Chuy’s first opened its doors on April 16, 1982, in a quirky, abandoned Texas Barbeque joint on Barton Springs Road in Austin. With seating for about sixty, a broom closet-sized women’s restroom, and a men’s restroom located outside, Chuy’s humble beginnings were anything but conventional. Founders Mike Young and John Zapp envisioned a vibrant and welcoming Tex-Mex restaurant that combined authentic flavors with a fun, eclectic atmosphere. From this vision, Chuy’s was born.
Mike and John, along with their unconventional “decorator,” Jose Cuervo, made some creative and memorable decisions when it came to the restaurant’s décor—largely influenced by budget constraints and inventive thinking. Signature Chuy’s touches, like the hand-carved wooden fish “swimming” from the ceiling, shiny hubcaps suspended above booths, and the famous Elvis shrine, remain iconic features in Chuy’s locations to this day.
While many of these original elements continue to define the Chuy’s experience, each restaurant is thoughtfully customized to reflect the unique character of the community it serves, thanks to a dedicated team that searches for distinctive and meaningful pieces.
Though rooted in Tex-Mex, Chuy’s menu reflects a blend of bold and diverse flavors, drawing inspiration from New Mexico, Mexican border towns, the Rio Grande Valley, South Texas, and Austin itself. A little-known fact is that the marinade used for Chuy’s signature fajitas is an old South Texas family recipe, famously featured at legendary South Padre Island beach parties. From the very beginning, the founders were committed to bringing fresh, high-quality ingredients to Tex-Mex cuisine—a commitment that remains at the heart of Chuy’s culinary philosophy today.
Please join us in welcoming Chuy’s to the Hutto Chamber of Commerce. We look forward to working together and supporting each other as we strive for success in our businesses and communities.
